Recently I have been loosing a little interest with my food which makes sticking to paleo more difficult. So, I decided to try some paleo recipes. I'm usually more of a "make up my own on the go" kinda gal but thought I would try out a few recipes to spice it up and help me stay on track.
Last night I made a Pecan crusted Salmon with a side of steamed squash. Delicious and different! But the main thing I wanted to share with you is the Paleo Pancakes. Oh my goodness were they tasty and so quick and easy. I was expecting something that was trying to be a pancake but just wasn't tricking me. I was wrong! They were BETTER than pancakes. And knowing that every single ingredient in them was clean and healthy made them taste that much better. Below is the recipe...give it a shot and you won't be disappointed. I topped mine with a tiny bit of Agave nectar to add some sweetness and scrambled some egg whites to get a little more protein. Enjoy!
Quick Paleo Pancakes
Time: 10 minutes
• 2 eggs
• 1/2 C unsweetened applesauce
• 1/2 C nut butter (not peanut butter! - almond/macadamia nut butter works well)
• 1/4 tsp cinnamon
• 1/4 tsp vanilla extract
• coconut oil
Mix all of the ingredients except the coconut oil in a bowl. Stir well, until you have a uniform batter. Next, use a bit of coconut oil to grease a non stick skillet. Spread some of the batter into the skillet to form a pancake, then cook over low/medium heat. Flip after 1 to 2 minutes, being careful not to burn them!
Once you've cooked all of your pancakes, you can serve them with a variety of toppings. A few that I like: chopped apples and cinnamon; heated blueberries; real maple syrup; and unsweetened applesauce.
